This dinner turned out close to what I hoped – super simple but very satisfying and filling
Browned ground beef combined with fat-free refried beans and fresh, store-bought, spicy pico de gallo
We bought this seasoning (JD’s Salsa in Seconds) at the Sugarloaf craft festival – definitely the Best buy of the day – very versatile. It can be combined with a can of chopped tomatoes for salsa but can also be combined with sour cream for a creamy “salsa” topping
The company’s recipe recommends mixing with sour cream and mayonnaise but we just used low fat sour cream and it worked fine
It has “heat” but is also a lovely foil to really spicy pico de gallo
The top layer was a corn tortilla cheese quesadillas
The bottom layer – toasted corn tortilla
topped with the beef mixture
topped with the cheese quesadilla layer
then a scoop of the fresh pico de gallo and some of the creamy “salsa” – delicious – YUM!
