Tilapia Piccata

After last week’s not as successful Fish Monday with the Tuna with a Blush Pasta, I decided to do a piccata – I know I can do this dish and I really like it.  I’ve done chicken piccata but, in honor of Fish Monday and tilapia being on sale: Tilapia Piccata!

Three thick tilapia fillets – rinsed and patted dry… then dredged in cornstarch and browned in a little olive oil.

The browned fish was put into a warm oven and I worked on the “piccata” using white wine, fresh lemon juice, and capers.  I reduced the sauce as the white rice finished cooking and wilted baby spinach with broiling water.  All in all – it turned out quite nice.  I would probably make more sauce, I really love the combination of flavors.  We had two nice sized servings and enough for a delicious lunch the next day.  YUM!
