I had 8pm meeting two nights a week this semester but I am blessed with a fantastic man who always had dinner for me when I got home. Frequently it was our favorite nachos and sometimes homemade pizza. I Never knew what would be on the nachos / pizza but it was always delicious.
So tonight’s creation was Thanksgiving Pizza and it makes me want to keep some of those ingredients in the fridge on a regular basis.
Start with Lavash (flat bread) – because I am gluten resistant flat bread works for pizzas without throwing my stomach into a tizzy. He uses two pieces of Lavash so that it is just a tad thicker and easier to eat. Between the layers of Lavash was a sprinkling of parmesan and a bit of balsamic glaze.
Next a hearty sprinkling of shredded Mexican cheese blend which includes cheddar, mozzarella, and two other cheeses. Followed by chunks of brie. All that was topped with shredded turkey, dollops of stuffing and cranberry sauce.
Bake at 400-degrees for about 10 minutes until the edges start to curl and are brown. An absolutely delicious reminder of a wonderful Thanksgiving dinner!
