Tilapia was on sale – this was super simple.
1 Tbsp of olive oil – lightly brown both sides.
Added 1c dry white wine (remember – use a wine you would Drink – cooking wine is nothing but fake flavor and sodium) – juice from one large lemon. Brought everything to a bubble for about 10 minutes.
Removed the fish, brought the liquid to a boil and added 1 Tbsp of butter until just melted – added some freshly ground pepper
Served up with long-grain rice and roasted asparagus – super simple but very nice, especially served up with the rest of the bottle of wine. Next time, will add a little more wine to the final reduction and a little more butter so there is more sauce.
