These sounded super quick and easy and we’re heading into my craziest time of year. I kinda followed the original: Super Simple Shrimp Tacos – although I thought the order she did things was way off.
This sauce was one of the best parts of the dish and I have actually started using Greek yogurt for all sorts of dips. The topping is Greek Yogurt mixed with chopped cilantro, cayenne, and lime juice
For her shrimp, she sautéd with olive oil and seasoned with salt, pepper, and a dash of cayenne. I used our favorite Mexican seasoning mix but it really was a little too salty and I added some additional cayenne for extra heat.
Plated: In the original recipe she sautéed the cabbage in a skillet with oil.. we couldn’t really figure out so I didn’t. My Heart liked the crunch of the raw cabbage (I bought a package of “cole slaw” mix for this so there are also shredded carrots in the mixture) and the added oil from frying the cabbage just wasn’t something we wanted. These really were super simple and quick and I’m quite sure that we will do them again.
