After last week’s SuperBowl Feast, everyone wanted something lighter but it was also cold so Clam Chowder seemed to fit the bill and everyone wanted it one last time before the weather changes… spring really seems in the offing.
Lemon Lush Dessert – I found this dessert on Pinterest, they called it Luscious Lemon Delight but that wasn’t the name of the recipe I got from my then mother-in-law all those years ago but the basic recipe is the same. I used to make this a lot in the 80’s and kids remember it but can’t honestly remember the last time I made it. I remember doing it both as lemon and also as chocolate but everyone wants me to try it with either butterscotch or dulce de leche next time. Either way – it was great to have it again. The base is flour, butter and nuts (pecans in this case), baked until golden brown – cooled and topped with a combination of cream cheese, powdered sugar, and some Cool Whip – I didn’t follow the recipe exactly on this layer because I thought the amount of powdered sugar they called for was too much.

… and then the final layer, Cool Whip and the remaining chopped nuts. I should have taken a picture of a cut piece but, frankly, we were just too happy eating it! Definitely a dessert we’ll have again – YUM
