This recipe looked delicious and super easy.. and it totally was – Baked Breaded Salmon.
Salmon fillet was on sale – this is a huge piece but everyone really likes salmon and we kept the sides “light”.
First layer: Olive oil, Dijon mustard, and chopped fresh parsley.
Next Layer: panko and freshly ground pepper .
Side dish: Goya Yellow Rice cooked with Pigeon Peas .
Baked the salmon 425-degrees for 25 minutes (recipe called for 12-15 mins but this was a very big salmon fillet).
Plated: The salmon was perfectly moist and the seasoning was wonderful. The yellow rice & pigeon peas were perfect and the kids found some very nice artichokes (which we steamed in the microwave). Delicious Dinner!
Dessert: Gluten-free brownies, drizzled with creme de cacao and stopped with creme de cacao whipped cream
