Chicken thighs were on sale and I had a craving… Stir Fry sounded good and I wanted some leftover rice.
Parboiled the broccoli – still crisp but tender and fresh button mushrooms – boneless, skinless chicken thighs
First stir-fried the chicken until almost done – then mushrooms – then the broccoli, just for a minute or two
Mixing cuisines – Hoisin / Madras: Hot curry paste – the sesame oil was at the very end
Next the sauce was mixed in – turned off the heat, added a slight drizzle of sesame oil and another stir before serving on short-grain “sticky” rice. Next time I think I’ll add more Curry Paste … not quite “hot” enough but still… YUM!
