The last of the leftover turkey – something different.
Chicken broth, fresh lemon juice, chopped sweet onion, diced tomatoes, chopped green chilies, minced fresh garlic, cumin, cayenne pepper, fresh ground pepper, chopped turkey, thyme – mixed together and simmered for 20 minutes.
Chopped whole avocado, reserved some for topping, frozen chopped cilantro, sprinkling of dried parsley added to the pot.
Simmered for another 20 minutes.
Served up with shredded Mexican blend cheese and the reserved chopped avocado – could totally make this soup out of chicken – definitely a good use of leftovers – YUM!
