Smoked Salmon Chowder

I made a Salmon Chowder a few weeks ago – I used smoked chowder which wasn’t what the recipe called for but it turned out great.  This recipe actually called for smoked chowder – equally delicious and distinctly different.  The original recipe: Smoked Salmon Chowder from Epicurious and I almost followed it.

Chopped leeks – I halved the recipe so just one

Chopped potatoes and celery

Sauteed in a drizzle of olive oil with minced garlic and freshly ground pepper

Cooked until caramelized

Then vegetable broth and milk and the addition of tomato paste

The same brand of smoked salmon that I used for the other salmon chowder – it is very reliable.. has great flavor

Once simmered – a little heavy cream to add richness – this was delicious and very satisfying on a cold night. YUM!
