When one is planning to make tilapia with a white wine, mushroom sauce… it’s a good idea to make sure you actually Have white wine! *sigh* So.. time to be creative!
Started with baby bella mushrooms
Sauteed in a bit of butter & olive oil
I rinsed off the tilapia, patted the fillets dry and pressed in browned sesame seeds and freshly ground pepper. The fillets were then browned in a touch of olive oil
Once browned on both sides they were put into a warm oven to stay wait until ready to serve.
To the mushrooms, I added a cup of sake and a Tablespoon of low salt soy sauce – I brought the mixture to a boil and reduced the liquid to make a sauce
The browned fillets were served on a bed of wilted spinach and then topped with the sake mushrooms. It was a pretty quick meal and had a slightly sweet taste and a little bit of a crunch from the sesame seeds. I think it’s a meal we’ll repeat.
