As you can probably tell, I haven’t been cooking much lately. That time of the semester … haven’t been home that much either! I was so excited to actually be home and making dinner and on a Fish Monday no less! The idea for this recipe came from the BBC GoodFood Home Cooking Series Eat Well magazine: Salmon & Leek Paella-Style (sorry – no online version of the recipe was available).. not that I followed the recipe in the least. About the only things in common are the leeks, rice and salmon but that’s where the inspiration came from!
Sauteed leeks and red bell pepper in a drizzle of olive oil
Added in a packet of Goya Yellow Rice (the same rice I used for the Yellow Rice w/ black beans & sausage). My Heart really likes this rice and it is very tasty and always cooks up just right. I was surprised at how different it tasted with the addition of the peppers & Leeks.. shows more versatility than I expected. Added in the water (per package instructions) and brought the mixture to a light boil then added in the chunks of salmon fillet, pressing them down into the liquid & rice mixture.
Cover and simmer for 25 minutes, or until the liquid is absorbed – the salmon was fully cooked but still moist. Stirred pan gently, so as to not break-up the salmon, before serving.
Plated with a simple marinated cucumber salad (hot house cucumber marinated in rice wine vinegar, mirin, sesame oil, and a sprinkling of toasted sesame seeds). The vinegary salad was a nice contrast with the rice and fish. YUM
