Salmon on sale and this sounded like a very simple and clean recipe: Salmon with Ginger & Lime.
Marinade: Lime juice, honey, garlic, grated fresh ginger – I did not remember to do this the night before so it marinated for about 90 minutes.. good but will definitely do it overnight next time.
Asparagus ready for roasting – a drizzle of olive oil and sprinkling of freshly ground black pepper.
Marinated salmon on top of onion and red pepper slices.
Roasted the asparagus in the 425-degree oven for 20 minutes with the salmon – sorta made asparagus “fries”.. toasty but they tasted pretty good.
Served up – the salmon was lovely but would be nice to have a slightly more intense flavor. I know that I’ll make this again – very simple and quick.
