I hate summer… there, I said it. But what I do like is salads during the summer. I know I know – I could and can make salads during the winter but I don’t want to. I like warm comfort foods in the winter and I like creative and fun salads during the summer. Tonight’s salad came out of knowing I would have ham left over from what I used in last night’s jambalaya (next time I’ll take pics and such) … so ham… eggs?? what else. This is what we came up with:
I grilled the ham (stove top grill pan), then chopped English cucumber, tomato, avocado and hard boiled eggs
Served up on mixed greens
And I had to show both plates – my Heart choose French dressing and I choose Ranch – very hearty and satisfying dinner!
