Mexican Baked Cod – cod was on sale so this seemed to be the perfect time to test out this recipe.
Cod was washed and patted dry and covered with a whole jar of medium salsa
Then covered with shredded cheddar cheese and crumbled corn tortilla chips
Baked in a 350-degree oven for approximately 30 minutes. Served up with avocado slices. Very simple and delicious. YUM!
