Menu 17 – Week of April 24, 2011 – Re-Visited & Notes.
Sunday Roast / Easter – Roast Leg of Lamb, rice pilaf, asparagus, mint sauce & mint jelly – Very traditional and delicious. The lamb was huge and expensive but totally worth it and I love my Heart’s mint sauce… something about the sweet, vinegar, mint combination.. tastes good on the peas too!
Fish Monday – Fish Enchiladas – Tilapia is on sale and I make fish tacos all the time so something different – I liked this dish and will make it again, probably like a Mexican lasagna though because I hate the Mission tortillas that we get at the grocery store.
Tuesday – We are at the Baltimore Speaker Series and are going out to dinner at Mari Luna – We love the Mari Luna Latin Grill that is close to home. This one is downtown Baltimore and just recently opened. It was nice but the service wasn’t great.
I had the carne asada – it was really good. Tracy Bolt, the University’s Registrar, had a coated tilapia, which is why I took the picture – I want to try to recreate it at home.
My Heart had the carnitas (pork, slow cooked with sauce).. not the best we’ve had but good. My dessert was the tri-Creme Brulee.. the one dessert that I can rarely refuse. I tend to be a purist but these were all tasty.
Wednesday – my Heart is in DC for an event so I am on my own… who knows what that means! Honestly – I can’t even remember what I had for dinner.
Thursday – My Heart is back down in DC and that is the night of the University’s Leadership dinner… yeah, I get fed! The food at the Leadership Dinner was absolutely delicious: jerk chicken, fruit salad, shrimp & sausage jambalaya and cheesecake with a fruit topping. Perfect meal for me – no gluten! The chicken had some “heat” but didn’t see too spicy. Everyone I talked to seemed to really enjoy the dinner! Congratulations to all the student Leaders – you all ROCK!
Friday – A busy week so we’ll probably grab a bite out
Saturday – My Heart is in DC all weekend at a conference. The kids and I went to the Sugarloaf Festival – one of our favorite craft festivals. I had to take a picture of these interesting condiment holders. They worked pretty well! Sort of like squeezing an udder… so appropriate in the Cow Palace, where the festival is held at the Timonium Fairgrounds
Menu 18 – Week of May 1, 2011
Sunday Roast – Stuffed pork loin with all the fixings – we need to use the rest of the huge pork loin we bought about a month ago and this seems to be good timing.
Monday Night – Last dinner with the Senior Class Council – a tradition at the end of every semester
Tuesday Night – Corned beef & cabbage – When I bought corned beef for the St. Patrick’s Day dinner, it was buy one / get one free – since we are getting ready to go on vacation, this was also good timing.
Wednesday – Senior Video Showcase so we’ll be going out to dinner
Thursday – No plan because of a very busy day we’ll see what we do
Friday – Orioles game – these are the rain check tickets from the rained out game earlier in the month
Saturday – Grad Week: Busch Gardens – and life gets even busier!
