Grilled Salmon Fillet with Blood Orange Olive Oil

Salmon fillets were a great price – Not quite what I planned menu-wise but delicious. Menu plan was salmon with roasted potatoes & broccoli but the potatoes we had at home weren’t good so a quick change to rice.

Fresh broccoli – cover with water – bring to a full boil – turn off the heat and drain

Mixed the cooked broccoli with cooked long-grain white rice, olive oil and freshly shredded Parmesan & black pepper

Not exactly what I had planned but turned out fine. Definitely liked the Blood Orange Olive Oil on the fish – not too strong but a lovely hint of citrus
