Burrito Experiment #5 – BBQ Burrito

It’s been a while since I’ve made burritos for dinner but we have stuff in the fridge that needed to be used so here we go.

First sauteed up some peppers and onions.

next some leftover boiled red potatoes from Sunday Roast: St. Patrick’s Day dinner

browned everything slightly

Opened up some pre-packaged pulled pork (bought on sale buy one get one free – one pulled pork and one pulled chicken – these are great to have on-hand for all sorts of creative meals including BBQ Nachos)

First veggie / potato mixture then a sprinkling of shredded cheddar cheese

Next some of the BBQ (I microwaved a small bowl so that it was softened and easy to work with)

a dash of HOT salsa for some kick

and griddle grill

 

Should have taken a picture of the inside after they were done but we were hungry and they were GONE ! *smile* These were very satisfying and the salsa gave a nice kick. The potato was a nice change from rice and they weren’t too gooey or messy – got the thumbs up from My Heart.
