We woke up hungry after a very long Saturday. Looking in the fridge – the leftover hash (see Hash Comfort Food 2) seemed like a good choice but I wanted to switch it up since I’ve made hash for dinner the past two Fridays. So….
I warmed up some leftover hash in a skillet
I scrambled up some eggs – these topped the hash and then some medium hot salsa
Then some shredded Mexican cheese
Wrapped up the burrito and put it in a hot dry skillet until…
..lightly browned. A very satisfying breakfast and a good use of some leftovers!
