Fish Monday – Cod on sale and this recipe grabbed my attention – super simple.
The recipe called for canned diced tomatoes with green peppers, onions and garlic added but I decided to do my own green & red peppers, garlic and onions.
Sauteed in a little olive oil
It is hard to see the layers: 1Tbsp melted butter – top with Cod fillets – cover fillets with Boursin then the pepper & onion mixture – can of chopped fire roasted tomatoes (drained) – drizzle of 1Tbsp melted butter.
Bake at 400-degrees for 25 minutes.
Served up on white long-grain rice with freshly grated black pepper – very satisfying on a cold, rainy night – YUM
