Dinner was Trader Joe’s Mandarin chicken with sticky rice but I really felt that we needed some veggies. I had a little bean sprout & greens salad left from the night before but certainly not enough but we did have spinach in the fridge … here is my concoction.
First I wilted a bag of baby spinach with boiling water, drained it thoroughly and put it in a bowl. Then added a drizzle of ginger dressing and a drizzle of sesame oil – followed by a sprinkling of toasted sesame seeds.
I had everything I needed in the cupboard!
Ta Da: The chicken was pretty good, not healthy but pretty good. The chicken pieces are cooked in a 400-degree oven for about 20 minutes – the sauce is heated in the microwave and poured over when serving. Not the best I’ve had but for frozen and quick… pretty tasty.
The Asian bean sprout and greens salad is one of my favorites and I think the spinach salad went very well with the dish – Yum!
