Tofu & Vegetable Patties with Rice

My new favorite food magazine is BBC Good Food – unfortunately it is British and the subscription is about $100 for the year so… Nope!  Fortunately I can look at recipes online! This is the 3rd recipe that I’ve made – Mushroom & Sausage Pasta was a huge hit and I haven’t posted the other one yet.  This time: Tofu & Vegetable Patties with rice

We had some baby bella mushrooms that we weren’t going to use (I forgot to use them in a dish earlier in the week) but they wouldn’t make it to next week so I decided to saute them for tonight – I sauteed them in about 1Tbsp of butter and then added some sake and let that reduce.

Ingredients for the patties: shredded carrot, chopped green onion, chopped garlic, grated ginger then two eggs, lightly beaten

Crumbled firm tofu then Mix together

The batter was supposed to be “poured” into a metal cookie ring but I didn’t have anything so I just poured it straight into the hot oil (about 3Tbsp) – they held together fairly well.  Cook for approximately 4-5 minutes on each side, when patties were golden brown they drained on paper towels and were kept warm in the oven.

The recipe said to serve with a sweet chili sauce but I didn’t really have that so: Chili garlic sauce, Hoisin, and a little Mirin for sweetness.  It turned out fine!

Tofu & Vegetable Patties with Asian rice and sake mushrooms – the verdict? Definitely a Do Again!  Yum!
