Tilapia with Wegman’s Lemon Caper Sauce


I’ve obviously been away too long… have gotten out of the habit of posting but I’m getting back to it! This was a super simple Monday night dinner.


Browned the tilapia in a couple tablespoons of olive oil – while the tilapia was simmering, I cook up some basic long grain rice and par-boiled some asparagus before lightly searing it in a bit of olive oil.


I simmered the fish in the Lemon & Caper sauce for about 20 minutes. Next time I would just use half of the jar, the whole jar wasn’t necessary


With the lemony-vinegary sauce on the fish and the bland rice, the nuttiness of the seared the asparagus worked well.
