Zuppa Toscana & Rice Crispy Cupcakes

Found this recipe on Pinterest – supposed to be a better version of Olive Garden’s Zuppa Toscana and it was very good.  My Heart has a cold so I wanted something warm, homey, and real comfort food… this soup fit the bill

Ground hot Italian sausage and crumbled bacon, browned

Chopped onions and garlic next and then cubed russet potato – added chicken broth and let everything simmer for about 20-minutes until the potatoes were cooked through

Chopped kale was added and then heavy cream and simmered a bit longer – served up with a hearty sprinkling of freshly grated parmesan

The soup was a hit with everyone… delicious.  Next time we are thinking less Italian sausage and more bacon!

Dessert also came from Pinterest: Cupcake Pebbles Treats – I didn’t use “Pebbles” cereal.. used Rice Crispies instead

Topped with ready-made Dark Chocolate fudge frosting and glittery sprinkles.  They were a great treat since I love rice crispy treats and cupcakes but don’t generally eat cupcakes any more… although I think my kids would argue that I just eat cupcakes for the frosting! YUM!
