Stuffed Pork Loin with the fixings

This is the other half of that ginormous pork loin that we bought. I am going to do a traditional stuff pork loin. I was on my own for this Sunday Roast, my Heart is at a conference in DC but will be back for dinner – the pressure was on!

This really was a Huge pork loin. I did sort of a rolling cut to open and flatten it out. Then Stovetop stuffing (yes… I cheated on the actual stuffing but the kids Love Stovetop so it was ok) and some apple slices. Tied the roast, coated the outside in Herbs de Province & freshly ground pepper then put it into a 450-degree oven for 20 minutes and then turned down the oven to 325-degrees for approximately 60 minutes.

My Heart got to the apartment just in time to make some gravy – everyone likes His gravy the best. Quick parboiled some asparagus and then roasted them in a touch of olive oil.

Mashed red potatoes – took out the roast and let it sit for approximately 20 minutes to let it settle.

It turned out just right, if I do say so myself. The outside was delicious and the inside still tender and juicy.

This was a delicious Sunday Roast… I missed cooking with my Heart but I did a pretty good job. I did pull off dessert too but totally can’t remember what I made.
