Pierogi Casserole & Apple Sundae

My Heart was busy so… dinner & dessert was left to me. I didn’t mean to find the most unhealthy casserole I could find but .. this is what we ended up with. We did have green beans! *smile*

Bake in a 350-degree oven for 35-40 minutes until cheese is melted and golden brown

Fresh green beans – bring to a boil then turn off and drain

… once the casserole was out of the oven, quickly sauteed the green beans in a little olive oil and then added a drizzle of balsamic glaze

Toppings for the casserole: sour cream and green onions. The casserole was a success – it has the texture / feel of pierogi with the mashed potatoes & pasta. Admittedly, the casserole is over the top with the bacon and onions and everything but the servings weren’t huge and I think it will make for good leftovers / lunches.

Apple Sundaes – first, homemade applesauce: three tart Granny Smith Apples & two Red Delicious apples – I cut them up chunky, smaller pieces for the Red Delicious because I want them to “melt” down but I want some of the tart apple chunks to stay “whole”.

… Added about 1/2c brown sugar, 1/2c whiskey, dash of cinnamon and allspice – I would have also added nutmeg but the kids didn’t have any..

Toasted some vanilla granola

Served up on top of Dulce le Leche ice cream – I wanted a taste similar to apple crisp without actually making the Crisp.
