Paella and Rum Banana Sundaes

Sunday Roast – Something simple because I got hit by a snowboarder skiing on Saturday.  We thought I broke my arm but luckily just a severe contusion .. unfortunately, woke up feeling like I got hit by a truck so I definitely didn’t want something complicated for dinner. This dish is perfect – My simple version of Paella

Tried this sausage and it was perfect – a little sweetness and a touch of heat

Salmon filet, skinned, imitation crab (on sale), raw shrimp

Frozen bay scallops (I would have preferred fresh ocean scallops but they just didn’t look very good) and the sausage

Browned the long grain converted white rice in a drizzle of olive oil and then, for the liquid, 4c of medium jarred salsa plus 1c of water and bring to a boil

Add in the seafood and simmer for 20-25 minutes until the rice & seafood is cooked

This was definitely a hit – a very easy way to do Paella, perhaps not as authentic as scratch but yummy

Bananas halved and coated in brown sugar and rum

Baked at 350-degrees for 45 minutes

And a drizzle of the caramelized rum sauce – YUM!
