My Heart suggested Lasagna for Sunday Roast and everyone agreed unanimously! It always seems like so much work and so many dishes to do lasagna but it is totally worth it… very hearty and satisfying!

This is almost my standard meat sauce but with less “sauce”. Ground beef, hot Italian sausage, 1 lg can of chopped tomatoes w/ the juice, a large can of tomato paste, chopped garlic, onions, green peppers, 1/2c red wine, 3-4 Tbsp of Italian seasoning, and freshly ground pepper. I use oven ready lasagna sheets – these seem to work really well and I don’t risk overcooking the standard lasagna sheets, which I have been known to do. The layers are pasta – meat sauce – ricotta (which has been mixed with a beaten egg –

mozzarella (we used up the rest of a block of mozzarella the kids had) – repeat.Img_4829

The final layer is meat and mozzarella with a sprinkling of a bit more ground Italian seasoning. (for the final layer we used the shredded mozzarella)

It baked up great. Some Italian bread, split open and spread with butter & garlic powder, was baked to crisp. Lasagna & bread was served with a side green salad and some red wine. YUM!!
