Chicken Taco Salad & Berry Shortcake

We had a foodie week and with the 4th of July (TONS of Food) ahead of us so we wanted a “light” Sunday Roast.

Ground chicken cooked with taco seasoning and black beans – my daughters absolutely delicious fresh guacamole: avocado, tomatoes, red onion, cilantro, lime juice, and a sprinkling of salt.

Other toppings included hot pico de gallo (store bought), shredded Mexican cheese, and cilantro. Plated on top of butter lettuce (pre-packaged) then topped with toppings of your choice and dressing, if needed / wanted.

I bought this for a dressing, if people wanted one – it was absolutely vile. Perhaps others would like it but it was SWEET.. almost like a French dressing. Threw the Entire bottle away – no one would eat it… EVER.

Super simple dessert: raspberries, black berries & strawberries marinated in whipped cream vodka on top of store-bought angel food cake and topped with homemade whipped cream.
