Sunday Roast – Birthday Dinner

It was my son’s girlfriend’s birthday…. actually her birthday was today, Monday the 10th, but we celebrated during Sunday Roast and she wanted a “traditional” Sunday Roast – the first of this fall season.

Top Round Beef – the rub: chopped garlic, dry mustard, fresh rosemary, thyme, freshly ground pepper, allspice, cayenne pepper, and olive oil. Cooked in a 350-degree oven for 2-hrs – internal temperature 140-degrees for medium-rare.

Pastry cream for the dessert – 8 egg yolks whipped with sugar until light yellow and fluffy

Whole milk heated with vanilla extract

Combine warm milk with whipped eggs and then 9oz of softened butter – cool and then place into the fridge

My Heart’s amazing gravy (which, of course, included merlot) – roasted carrots, gold potatoes, onions, and parsnips – the beef turned out just right

Delicious Yorkshire puddings – Everything turned out perfect and the only way it can be better is with my Heart’s gravy on everything.

Strawberries marinated in whipped cream vodka – Puff pastry

…topped with toasted almonds and powdered sugar and a little pastry cream to hold the candle! I was surprised at how light dessert was.. sinful, decadent, and amazing but very light! YUM.. and Happy Birthday Shannon!
