“Snowed In” in October foods

OK – we weren’t snowed in but it has been a ridiculously busy few weeks including Homecoming and HealthCampsOR last weekend and a tremendously LONG week so we took advantage of No Plans and a freak October snow storm to stay In and chill (so to speak) out.  Just what we needed!  Here’s what we ate!

We didn’t get up until about 11am and basically just had some tea but around 3pm – my favorite snack… air popped popcorn with a drizzle of butter and Monterey Steak Seasoning

I decided to make Asian for dinner because we had all the ingredients on hand – first my attempt at EoMuk Bbokkeum – I don’t think I got it quite right but it was basically what my son told me over the phone.  Started with green & red peppers and onions sauteed in a little olive oil…

..then 1/2 of a roll of “fried fish cake” – frozen & defrosted..

..sliced into strips and ..

…added to the peppers and onions

Once they were thoroughly sauteed, added shoyu (soy sauce), sesame oil and crushed red pepper flakes.  Will definitely add garlic next time

Mixed and simmered light a little bit longer

Also made my favorite – Mabo Tofu

Cooked up some short-grain “sticky” rice to go along – not bad Snow Day fare – Yum!
