Tonight I made my version of the Amateur Gourmet‘s Roasted Shrimp & Broccoli. It was delicious… although I still need to perfect the timing for the broccoli. Some were a little crisper than we wanted and I’m still not entirely sure that the oven is quite right temperature-wise. I did buy an oven thermometer but it didn’t work in our oven (sigh).
Most of my differences were in seasoning because I forgot to take the list of seasonings with me to the grocery store so I faked it. The broccoli had olive oil, chopped garlic, a splash of lemon juice and Tabasco sauce, Italian seasoning and lots of freshly ground pepper. The shrimp had olive oil, Italian season, lemon juice, and freshly ground pepper. I added the parmesan because I like parmesan and because he mentioned it in the beginning of the article and it caught my attention. We’ll definitely work on this dish… it was easy and relatively fast and pretty yummy. I think it might also be doable with scallops.
