Quick & Easy Tilapia - Food, Fun, Whatever !!

I am a fan of tilapia – it is generally inexpensive, easy to cook, and mild but not tasteless. I had a plan for the tilapia but nothing sounded quite right and this is what we ended up with, while digging through the cupboards and fridge.

Fresh green beans, mushrooms, red and green bell peppers.  Parboiled the green beans first – in a wok, cover with water and bring to a boil, boil for 2-minutes and remove from heat then drain. Over medium-high heat, add 1/2 Tbsp olive oil and start to stir-fry the green beans, add the peppers and continue to stir-fry for a few minutes and then add the mushrooms until they start to brown.

While prepping the vegetables – start the yellow rice, which takes 20-25 minutes to cook.  This dish would be good with almost any side so the choice is yours.

Push the cooked vegetables to the sides and add in the tilapia and let it sear on one side for about 5-minutes then pour on your choice of sauce.  My Heart found this Pineapple / Coconut / Mango / Tequila cooking sauce from the Giant SIMPLY brand and… well, what’s not to like?  Reduced the heat to medium and simmered, covered, to finish cooking the fish and slightly thicken the sauce.

This wasn’t my plan at all but it came together perfectly.  The sauce was delicious, the vegetables  still tender crisp, everything worked well with the yellow rice.  The bottom line though, this was less about the specific sauce then how easy it was – very satisfying And healthy. Nice!
