Pork Loin with Pommes Me

Wednesday night dinner – Pork Loin with my version of pommes Anna and tomato & mozzarella salad.

Pommes Anna, my version (thus Pommes Me) – red potatoes thinly sliced with a mandolin slicer – drizzled with some olive oil and sprinkled with Italian seasoning and freshly ground pepper.  Cooked with the pork loin at 350-degrees for approximately 1-hour.

Tomato and mozzarella salad drizzled with olive oil and balsamic vinegar
and a chiffonade of fresh basil – let it marinade for 45 minutes.

The pork loin was marinated in a balsamic salad dressing – roasted at 350-degrees, covered,for 40 minutes and then uncovered for 5-10 minutes until it reached an internal temperature of 160-degrees. Let rest for five-minutes before slicing.
