Poor Man’s Eggs Benedict – Needed to make a quick brunch before I had to go to work (on a Saturday) and had quite a few things that needed using before we went away for most of the week (I was at a Conference in DC Sun-Wed). Didn’t have the proper makings for Eggs Benedict but this came together just fine.
Toasted English muffins – the Sauce: shredded Mexican cheese blend melted in a little milk ??? added a heaping Tbsp of grainy French mustard for extra flavor & texture and freshly ground black pepper
..Chopped crispy bacon
??? scrambled eggs
???more cheese & mustard sauce and more freshly ground pepper. Definitely not a complicated dinner but it sure hit the spot! YUM!
