As I have said before – I LOVE Pizza Night – Like my Heart isn’t wonderful enough because he is patient with my schedule, including the fact that I have a 9pm meeting on Tuesday nights AND a 7pm meeting on Thursday nights for this semester.. he also makes me dinner.
Pizza Basics: Two large flour tortillas so that there are double layers, making a sturdier base.Pizza One – Between the layers on this pizza, spinach and shredded mozzarella
Shredded rotisserie chicken breast mixed with some Jack Daniels BBQ sauce, tabasco, freshly ground pepper, a little whiskey and a little beer
Pizza One Top layer – shredded Mexican blend, sun dried tomatoes, BBQ chicken mixture, and a little more Mexican blend
Pizza Two: Between the layers, mozzarella and balsamic glaze. On top: mozzarella, bacon, Stilton, Green & Hearty Apple Chutney
Both pizzas were delicious but Pizza Two was stunning – such a great combination of flavors including the tart bit of heat in the chutney. Definitely one of my favorites – YUM!
