Pizza: BBQ Pork

I’ve been under the weather this week and my Heart was so sweet and made dinner one night – it was all about using the leftovers in the fridge and what a great job he did!

He uses flat bread as a “crust”… it isn’t gluten-free but it doesn’t seem to bother me as much.
“Inside” the flat bread is cheese, balsamic glaze and a light layer of baby spinach.
On Top: shredded Mexican cheese and corn cut off the cob, leftover from the Memorial Day feast

10-15 minutes later at 400-degrees… damned delicious dinner! Thanks to my Heart for taking such good care of me!
