Menu 15 – Week of April 10, 2011

Sunday Roast – We returned from HealthCampCT @ Yale School of Nursing to a wonderful Korean Feast. Absolutely delicious… especially my favorite: chop chae

Fish Monday – Fish Tacos has truly become one of my favorite meals – I know that we are going to eat these a lot during the hot summer months.

Tuesday – My Heart is in DC for a dinner so I was on my own… I don’t even remember what I ate – probably not a good sign!

Thursday – I finally made the Steak Burritos I had planned last week, using the leftover flank steak.

Friday – We had a bus trip to the Orioles Game… which was a total Rain Out – YUCK

Saturday – Was lovely and included a wine tasting & food pairing at Boordy Vineyards.  That night we had Indian with friends… a great Food day!

Starting with wine & fruit & cheese – next pasta Alfredo with peas, scalloped potatoes, pork BBQ (there were buns), chicken in a honey sauce, & field greens with pecans and craisins with a light dressing

Port & dessert … my favorite – the little mousy has a chocolate mousse inside – YUM.  Dinner with friends was at Indian Delight – Wonderful & delicious!

Menu 15 – Week of April 10, 2011

Sunday Roast – Looking at the last few cool days, we decided on pot roast with all the fixings.

Fish Monday – Tilapia Tikka Masala with rice & spinach – I am feeling inspired by Saturday’s dinner!

Fish Tuesday – What the heck.. fish is good for us and cod is on sale so: Mexican baked cod with rice & avocado

Wednesday – I am phasing out the late meetings on Wednesdays as the semester comes to an end so I get to cook – BBQ Pork Chops with Buckwheat (which we are testing out – they are gluten-free.. who knew!) & green beans

Thursday – my Heart is in DC for a meeting and I am heading to see RENT with the kids at the University

Friday – The University is hosting it’s first Relay for Life… we’ll be stopping by to show our support

Saturday – Off to the MobileCitizen Summit in DC
