Seemed like the right weather for a nice warm comfort food meal.
Ground round, a half packet of dry onion soup mix – I like the flavor and it seems to help make the meatloaf very moist, and two raw eggs.
Mixed together by hand and patted into a loaf pan and a drizzle of ketchup
The asparagus looked good in the store on Sunday (just two days ago) but were a little slimy on top tonight so I washed them thoroughly and decided to roast them as the meatloaf cooked.
A lovely pinot noir to go with dinner and to add to the gravy. The asparagus turned out pretty crispy, like little fries, but I think they were ok. Everything else – very comforting and very nice on a cold fall evening.
