Leftovers: Roast Beef Salad

Today was a steamy day, in the 90’s – sounds like salad weather to me. We still had a bit of the bottom round roast from Sunday Roast so that seemed like a good place to start. Nothing fancy but it was cool and satisfying.

A bag of mixed spring greens (my daughter always teases me about liking the “weeds” but I admit I do like the mixture of greens, especially the ruffly and bitter ones. A nice combination of flavors) – 1/2 of an English cucumber, peeled and cut up – 1 tomato, cut in chunks – a few mini carrots – pieces of the leftover roast – crumbled gorgonzola. We have different tastes in dressing but the Basil Vinaigrette that I picked up at Wegman’s was good.
