Labor Day Dinner – Slow-cooked Ribs

Labor Day seems to be the last hurrah of summer so ribs always seem to be right – following my dad’s tradition, we slow roasted pork spare ribs in the oven at 225-degrees for approximately four-hours. The ribs were rubbed with a Jack Daniels rub and then for the last 20 minutes I added homemade BBQ sauce.

What else do you have with ribs but corn on the cob…

…and homemade potato salad. Although we know that summer (at least warm weather) isn’t quite gone yet but this is our traditional farewell dinner as we step into the craziness of Fall.
