Italian Tilapia on rice


I was thinking something along the lines of cacciatore but with fish.


First peppers and onions then a medium can of chopped tomatoes and fresh basil.


Then I rinsed and patted dry the tilapia fillets and slid them under the sauce. This was left to simmer lightly for about an hour while my Heart was doing HealthCamp Radio.


The simmering time was fine – the flavors all melded well. Instead of pasta, we had the fish on rice. YUM!
