Gluten-free Oven Fried Chicken

Guilty Pleasure? Fried Chicken. I haven’t been eating it much lately… both because it isn’t the healthiest thing in the world and also because I try very very hard to be Gluten-free. I was surprised to see a recipe for Oven Fried Chicken on the side of the GF Bisquick box but thought… what the heck.

Asparagus ready for roasting – olive oil, Herbs de Province, freshly ground pepper

So far we’ve only made pancakes with this new Bisquick, they were really good.

1c Gluten-free Bisquick, Herbs de Province, paprika, garlic powder, freshly ground pepper.

Dip boneless chicken thighs in beaten eggs then the seasoned Bisquick mixture then back into the eggs and back into the mixture again. Melt 1Tbsp of butter in a baking pan and place the chicken on the butter, topside down.  Preheat oven to 400-degrees.

Mashed up some red potatoes with sour cream, milk, and shredded cheddar because fried chicken just goes with mashed taters.

Roast the asparagus with the chicken.

Cook chicken at 400-degrees for approximately 25 minutes then flip and cook for an additional 20 minutes (it would take longer for larger pieces or chicken with bones) to 165-degree internal temperature.

I think this recipe will totally satisfy my craving for fried chicken – it was very crispy but the chicken was juicy and tender. YUM!
