Flank Steak with Roasted Potatoes & Broccoli

Flank steak was on sale – I planned two meals out of one flank steak. This is meal one.

Marinated the steak in red wine, olive oil (Just a drizzle – it helps the herbs, etc. “stick”), and some tabasco for just a touch of “heat”. Sliced some white mushrooms to saute… mostly because I love mushrooms with steak.

Red potatoes & broccoli – parboiled, drizzled with olive oil & sprinkled with Herbs de Province & freshly ground pepper – then roasted. Freshly ground pepper on the flank steak – broiled to medium rare.

Took the marinade and reduced it as the steak cooked for a sauce.

Potatoes & broccoli nicely browned. This was a delicious week night dinner that didn’t take too long. Par-boiling the vegetables definitely makes the roasting process faster. YUM!
