Fish Monday: Salmon Chowder

Fish Monday: Cold, wet Monday.. really glad I put this Salmon Chowder on the menu – original recipe from Eating Well: Salmon Chowder and I almost followed it.

Sauteed chopped carrots and celery – next 4c low sodium / low fat chicken broth, 1c water.

Added in chopped green onions and defrosted cauliflower florets, also chopped – simmered 10 minutes.

Potato flakes used as thickener – a great idea, it made it thicker and “creamier” while adding Zero fat – Added in 1 1/3c potato flakes, mixed in thoroughly with some dried tarragon

The recipe called for raw salmon cooked in the soup – we decided on smoked salmon

Very luscious salmon was flaked and added to the thickened soup

On the side, a couple cheese quesadillas using corn tortillas

Very satisfying on a cold evening – the smoked salmon worked perfectly and added a nice smokey flavor to the chowder.  I think I might add corn next time
