Fish Monday: Pesto Tilapia

Fish Monday and Tilapia was on sale. I wanted to do something different and saw some recipes with baked tilapia with different toppings. Here’s my take on that idea.

Just a small jar of pesto plus some chopped some fresh Italian parsley to go with it. Lightly coated the tilapia in olive oil and then topped with the pesto/herb mixture.

Baked the fish in a 400-degree oven for approximately 15 minutes, until the thickest part flaked.

The finished fish smelled delicious and I tossed a little of the olive oil from the pan with the cooked rice ziti. A simple salad on the side. I really like pesto – I don’t know why I don’t use it more often. This is definitely a dish I will repeat. YUM! **Note: My Heart suggested making rice vermicelli next time, the pesto “sticks” to it a little better.
