Fish Monday: Broccoli Fish Roll Up came from this recipe for Broccoli Stuffed Sole – They didn’t have sole at the grocery store and Hake was on sale.  It did have to cook longer because it is much thicker than sole

Recipe called for lemon juice – I decided to use fresh lemon juice and to add lemon zest to the rice mixture

Recipe called for frozen broccoli, thawed and drained ??? there is additional sodium in frozen vegetables so I used fresh broccoli – brought to a boil, removed from heat and let it sit in the hot water for about 10 minutes then drained and rinsed with cold water to stop the cooking process??? chopped.

Chopped broccoli mixed with leftover short-grained rice (warmed), shredded sharp cheddar, lemon zest and 1Tbsp melted butter – mixed thoroughly

1Tbsp melted butter, fresh lemon juice, freshly ground pepper

Used lime olive oil in the casserole dish to keep the rice and fish from sticking and to add more citrus flavor. There was obviously lots of rice – the fish is wrapped around rice also, which made the fish very moist.  The melted butter, lemon juice, and pepper mixture was drizzled over the fish before baking.

Baked at 350-degrees for 40 minutes until the fish was flaky – my Heart liked that the rice was crispy on the edges. I would like to try this method with other fish. Definitely a Do-Again – Yum!
