Fish Enchiladas

I am trying to catch up before I go on vacation for 2 weeks to England … won’t be doing a lot of blogging, I expect!
Fish Monday – I wanted to do something different with the Tilapia that is on sale so I’m trying a recipe for enchiladas. The downside? Those crapy tortillas don’t work, they fall apart so I ended up making more of a Enchilada / Lasagna but it worked.

Coated the tilapia is Enchilada sauce seasoning. I like using the packet dry as a rub. The rest of the ingredients including the crappy Mission corn tortillas. I shouldn’t be so lazy, I should go get decent corn tortillas but there isn’t a convenient place close by… and Lazy!

Broke up the fish and added it to the sauce and then some shredded cheese.

I did manage to “roll” a few but they cracked so I layered on sauce, cheese, and a few more tortillas – topped with more sauce

Topped with lots of shredded cheese. Baked in a 350-degree oven for approximately 35 minutes until hot and bubbly.

Let the casserole sit for about 15 minutes to settle. It was pretty messy but the taste was nice. I think I might actually make this dish again more the style of a lasagna rather than trying to roll those crappy tortillas (or get off my behind and get some decent tortillas – we’ll see which one wins!) All and all (with the whining) – YUM!
