Fish Burger with Lemon Aioli

Definitely a hit – I sorta followed the original recipe: Fish Burger with Lemon Aioli – You will see the changes in the notes.

Didn’t have “olive oil” so used regular low-fat mayo and used grainy mustard instead of plain – we like the texture.

Panko instead of regular breadcrumbs – flat-leaf parsley vs. regular parsley – Cod was on sale v. tilapia.

Patties were fairly soft (and HUGE) – I halved the recipe but these were still substantial.

I definitely like the Panko.. gets very crisp – She topped with cheddar cheese and also onion & tomato..  I forgot to do the onion but traded the cheese for avocado, which has been cheap and plentiful this year.. and we really like avocado!

Obviously we weren’t using rolls so toasted corn tortillas.  They held up very well .. very pickup-able.  My Heart really enjoyed these – his only addition? BACON!  Next time for sure!
