Dinner for 1: Pasta with Vegetables & Eggs

My Heart is away to Philadelphia for a series of events for three days. When he is away I do Two things Very badly… Eat and Sleep.  So.. I promised myself that I would try harder this trip – at least to eat better! (no guarantees on the sleeping though!)

The veggies were left over from last week’s Italian Sausage & Peppers Wrap – I heated them up and then topped them with a couple eggs.

Boiled some rice pasta (spaghetti) and topped it with some butter, freshly grated parmesan cheese and freshly ground pepper

Next the vegetable / egg fry and some more grated parmesan

A little more black pepper and inner was ready – the egg yolks were still nice and soft and runny – Not bad! Yum!
